A tree with two or three varieties grafted onto it usually has the problem whereby one variety commands more energy from the plant and dominates over the weaker variety. Unless carefully pruned, the less-dominant grafts get taken-over by the more vigorous variety.

One solution that allows for two varieties from the same plant is DUO Planting. Planted 100-150mm apart, each variety has its own rootstock, preventing dominance. They can grow side by side without competition, and pruning can be more easily done by identifying growth from each plant individually.

When it comes to espaliering duo planted trees, its important to cut both together at the level of the wire, and the subsequent branches that grow should be thinned out to two branches - one acting as the leader, while the other forms the horizontal-T arm. One variety gets bent left, while the other variety gets bent right, and the two leaders sit side by side in the middle. See picture below.
